Over the past few years, and partially in response to customer demand, more and more tea sellers have been seeking out and qualifying for certifications for their teas. The most common of these certifications are fair trade, organic, and kosher.
Fair trade, in essence, is about providing better working and living conditions for the people who grow and produce tea. Organic denotes teas that are grown according to specific environmental conditions to produce a more earth- and human-friendly product. These two certifications were created by private and governmental organizations to address the health and well-being of our planet and the people, animals, and plants who live on it.
The laws governing kosher foods are also based on the health and well-being of the world, although they derive from a different source. (Remember the commercials for Hebrew National hot dogs that “answer to a higher authority?”) Kosher is governed by Jewish Biblical law, or halacha. Foods (and beverages) with kosher certification are considered fit and proper and permissible to eat according to this law.
